Saamai Noodles Recipe: Healthy Little Millet Noodles
Saamai noodles are little millet noodles native to Tamil Nadu, cooked in under 15 minutes. They are high in fibre, lower on the glycaemic index than wheat noodles, and naturally gluten-friendly — making them a nutritious everyday meal for the whole family.
What Are Saamai Noodles?
Saamai (சாமை) is the Tamil name for little millet (Panicum sumatrense), one of the oldest cultivated grains in South India. Unlike refined wheat noodles or instant noodles packed with preservatives, saamai noodles are made from little millet flour blended with wholesome spices — giving them a nutty flavour and a satisfying bite.
At Thinai Organics, we source our saamai from certified organic farms across Tamil Nadu, ensuring every pack is free from synthetic pesticides and chemical additives. When you cook saamai noodles, you are not just making a meal — you are reviving a grain that sustained South Indian communities for centuries.
Why Choose Saamai Noodles Over Regular Noodles?
- Rich in dietary fibre: Little millet contains significantly more fibre than polished rice or refined wheat, supporting healthy digestion.
- Lower glycaemic index: Saamai releases energy more slowly than maida-based noodles, making it smarter for blood sugar management.
- Naturally gluten-friendly: Saamai itself does not contain gluten — check product labels for severe intolerances.
- Packed with minerals: Little millet is a good source of iron, phosphorus, and B-vitamins.
- Traditional Tamil heritage: Saamai has been cultivated in Tamil Nadu for over 3,000 years, supporting local organic farmers.

How to Make Saamai Noodles — Step-by-Step
Step 1: Prep Your Vegetables
Wash and finely chop your choice of vegetables. Keeping them small ensures they cook quickly and mix well with the noodles.
Step 2: Boil the Water
Bring 600 ml of water to a rolling boil in a wide pan. Add a few drops of cold-pressed oil and a pinch of salt.
Step 3: Cook the Noodles
Add the saamai noodles and cook on medium heat for 3–4 minutes, stirring gently to prevent sticking. Drain and set aside.
Step 4: Temper the Spices
Heat 1 teaspoon of cold-pressed sesame oil in a kadai. Add mustard seeds, curry leaves, and green chilli. Sauté 30 seconds until fragrant.
Step 5: Sauté the Vegetables
Add chopped vegetables and stir-fry on high heat for 2–3 minutes until slightly crisp.
Step 6: Combine and Season
Add cooked noodles to the kadai, toss well, add the seasoning sachet, and adjust salt to taste.
Step 7: Garnish and Serve
Turn off heat, garnish with coriander and lemon. Serve hot. Total cooking time: 12–15 minutes.
Thinai Organics Tip: Use Cold-Pressed Oil
Wood-pressed sesame oil has a rich, nutty aroma that perfectly complements little millet. Our cold-pressed sesame oil is extracted at low temperatures to retain every drop of natural goodness.
Variations to Try
Upma Style: Skip the sachet and season with sambar powder, turmeric, and tamarind.
With Eggs: Add a lightly beaten egg just before combining noodles for extra protein.
Noodle Soup: Cook in vegetable broth with ginger and pepper for a warming soup.
